LaLa’s Einkorn Sourdough Bread

I’ve been learning how to make Bread, FROM SCRATCH.  Not just any bread.  Bread made the old-fashioned way.  I do not use yeast.  I use a “sour-dough starter”.  When I first started learning about sourdough it all sounded so mysterious to me.  I actually tried to make sourdough a few years back but it was an epic fail.  But then I came across this video from the amazing Mike Greenfield, Bread Baker Extraordinaire.  And.I.Was.Hooked.  I must have watched this video 20 times.  It is mesmerizing.  The very first time I watched it I knew I had to try my hand at bread baking again.  I’m so glad I did.  I have a very long way to go but I can honestly say that I’ve learned the secret of sourdough making and my sourdough (her name is Natasha) is active, bubbly and always ready to make some bread for me.

They say food can be like art and I fully understand that now.  Look at that bread.  I made it.  I still can’t believe it!  It’s far from perfect, but it’s mine.  It was/is so delicious.  It looks “dense” but it was not.  It was light and airy inside.  “It’s real bread”.  If you’re an experienced bread baker, you’ll know where the problem areas are, but I’m having so much fun learning.  It’s a stress reliever for me.  I’ll be making bread “God willing” for the rest of my life.   I love it that much.  Ok, onward.  Do you want to learn?  There are a couple of ways.

Working with Einkorn flour is a special skill.  I learned more from this nice lady: Carla.  These videos will take you step-by-step from learning how to make the sourdough straight through to achieving something like the loaf I made above.  While I must admit she makes it look a lot easier than it is, success is achievable if you just stick with it. Don’t give up! 
You don’t have to use Einkorn Flour, but that is what I chose.

After watching Bread Porn I decided to check out more of Mike Greenfield’s (from NY) bread videos.  Mike is fun to watch and gives so many tips it’s worth the time.  I eventually joined his “Sourdough University” and picked up lots more tips there.  I’m immersed in that course and still have not grasped everything but I’m loving it.

If you’ve been longing to make bread.  Do it!  You’ll have a few failures but just decide, like all of us, that that is normal and you will bake your way to success.
